Avocado Ice Cream

We made avocado ice cream tonight! Yes, very strange and definitely not my first choice but oh my is it delicious! Nathan saw a lady making it on a TV show last week, sent me a text to which I quickly dismissed as disgusting. He wanted to try and make it so we set out today for ingredients.

Avocado Ice Cream
3 ripe avocados
3/4 c. sugar
1 1/2 c. coconut milk
2 Tbsp lime juice.
1/4 c. shredded coconut, lightly toasted

Mix all ingredients in a blender and pour into ice cream maker. Follow directions. (Our ice cream maker sadly bit the dust a while ago so I poured the mixture into a baking dish and put it in the freezer.)

When it is ready to eat, I will post a picture. YUM!!!
